PROBLEM TO BE SOLVED: To provide a simple and efficient method for producing oils and fats with high content of canolol and to provide oils and fats with high content of canolol.SOLUTION: There is provided a method for producing oils and fats with high content of canolol, which comprises a step of heating sinapic acid in a plant crude oil. Further, a refining step may be performed after the heating step. Canolol can be efficiently produced by the oils and fats with high content of canolol obtained by the production step and oils and fats with high content of canolol in which the content of canolol is 5000 ppm or more.
