PROBLEM TO BE SOLVED: To provide frying oil-and-fat for producing a fried product, such as donut, improved in all of oiliness, melting feeling of oil content in the mouth, and flavor, and to provide the fried product (especially donuts).

SOLUTION: The frying oil-and-fat contains 3-58 mass% of liquid oil (10°C and liquid product) excluding palm-based oil-and-fat, &ge5 and <18 mass% of transesterified fat made by transesterification of a palm soft part (an iodine value of 55-59), an amount of &ge1.4 times that of the transesterified fat, of a palm-based oil-and-fat (an iodine value of >34 and &le59) excluding the transesterified fat, and 0-20 mass% of oil-and-fat of an iodine value of &le34. The fried product (especially donut) is produced by using the frying oil-and-fat.
