The present invention relates to an aging-suppressed frozen rice cake, and a production method thereof. To this end, the aging-suppressed frozen rice cake is prepared by the following steps: (A) heating grain flour with superheated steam; (B) steaming the grain flour treated with the superheated steam to produce rice cake; and (C) freezing the prepared rice cake with magnetic resonance quick. According to the present invention, aging of the rice cake can be suppressed after thawing, and the rice cake barely be hardened thereby.본 발명은 노화가 억제되는 냉동떡 및 이의 제조방법에 관한 것으로 (A) 곡물가루를 과열수증기로 가열처리하는 단계; (B) 상기 과열수증기로 처리된 곡물가루를 증자하여 떡을 제조하는 단계; 및 (C) 상기 제조된 떡을 전기자장(magnetic resonance quick)으로 냉동시키는 단계;를 포함함으로써, 해동 후 떡의 노화가 억제되며 이로 인하여 떡이 단단해지지 않는다.
