PURPOSE: A Chinese cabbage salting and aging apparatus for producing kimchi is provided to rapidly and uniformly salt Chinese cabbage by securing the vacuum degree inside an internal space of a chamber into 300~500mmHg. CONSTITUTION: A Chinese cabbage salting and aging apparatus for producing kimchi comprises the following: a cylindrical chamber(10) with a cover(11)； a stand(20) with plural rollers(21) arranged to the axial direction, installed in the inside of an internal space(12) of the chamber； a cart(30) including wheels(31) on the lower side and a handle(32) on one side of the cart, installed to the traverse direction when the chamber is supported by a supporter(33)； a tank(41) and a vacuum pump(40) installed on the cart, and connected to the internal space of the chamber using an exhaust line(42)； and a vacuum-degree sensor(43).본 발명이 해결하고자 하는 과제는 김치를 제조하는 과정중 절임공정이 빠른 시간내에 속성으로 균일하게 이루어질 수 있으며, 발효과정이 진행되는 숙성 공정에도 연화 및 산패의 문제가 발생될 염려없이 사용할 수 있도록 함으로써 주방공간이 제한된 요식업소에서 차별화된 김치를 제조할 수 있게 한 배추 김치 제조용 절임 및 숙성 장치를 제공하기 위한 것이다.본 발명의 과제는 한쪽에 커버에 의해 여닫힘으로써 밀폐되는 원통형 챔버； 상기 챔버의 내부공간에 설치되어 다수의 로울러가 횡방향으로 배열되게 축설된 받침대； 하부에 바퀴가 설치되고 한쪽에는 손잡이가 설치되어 상기 챔버가 지지대에 지지된 상태에서 횡방향으로 설치된 수레； 상기 챔버의 내부공간에 배기라인으로 연결되어 상기 수레 위에 설치된 탱크와 진공펌프； 상기 탱크에 설치되어 압력을 감지하여 상기 진공펌프를 제어하는 진공도 감지 센서；로 이루어진 배추 김치 제조용 절임 및 숙성장치에 의하여 달성 되어진다.
