The method for manufacturing functional lacquer cold noodles according to the present invention can improve the quality of the cold noodles and the preference of consumers by adding the lacquer extract, from which the lacquer toxicity are removed, during the manufacture of the cold noodles to transfer the nutritional and functional ingredients, color, scent, and taste of the lacquer to the cold noodles well.
