An object of the present invention is to provide a novel nystose crystal-containing powder having fluidity suitable for handling and suppressed powdering and its production method. According to the present invention, there is provided a composition comprising (a) a nitestose content of 71 to 90% by weight, (b) 0.2 to 18.6% by weight of gluconic acid based on the total weight of nystose crystals, (C) a nystose crystal-containing powder having a moisture content of 7 to 14% by weight. According to the present invention, there is also provided a method for producing nystose comprising the following steps: (A) a step of reacting sucrose with an enzyme solution containing -fructofuranosidase and glucose oxidase to produce nystose (B) (C) adjusting the gluconic acid content in the solution obtained in steps (A) and (B) to 0.1 to 20 wt% (D) adjusting the concentration of gluconic acid in step A step of obtaining a nystose crystal from the solution obtained in the step (C) and (E) a step of adjusting the moisture content of the nystose crystal obtained in the step (D) A method is provided.本発明は、取扱いに適した流動性を有し、かつ、粉舞いが抑制された新規なニストース結晶含有粉末およびその製造方法を提供することを目的とする。本発明によれば、(a)ニストース含有率が71~90重量%であり、(b)ニストース結晶の総重量に対して0.2~18.6重量%のグルコン酸を含有し、かつ、(c)7~14重量%の水分含量を有する、ニストース結晶含有粉末が提供される。本発明によれば、また、以下の工程:(A)β-フルクトフラノシダーゼとグルコースオキシダーゼとを含有する酵素溶液とスクロースを反応させることによりニストースを生成させる工程;(B)反応液中のグルコースをグルコースオキシダーゼによりグルコン酸に変換させる工程;(C)工程(A)および(B)で得られた溶液中のグルコン酸含量を0.1~20重量%に調整する工程;(D)工程(C)で得られた溶液からニストース結晶を得る工程;および(E)工程(D)で得られたニストース結晶の水分含量を調整する工程を含んでなる、本発明によるニストース結晶含有粉末の製造方法が提供される。
