PROBLEM TO BE SOLVED: To provide acidic oil-in-water emulsified food similar to mayonnaise-like food or emulsified liquid-like dressing, having mild acidity specific to mayonnaise even when dried with heat and fried with oil: and to provide use of the same.
SOLUTION: The acidic oil-in-water emulsified food has 100-5,000 mPa s of viscosity, and contains 3.0-5.0% of organic acid (including lactic acid), 0.5-5.0% of lactic acid, and 0.01-5.0% of lactic-acid fermented egg albumen in terms of solid content based on the food.
