PROBLEM TO BE SOLVED: To obtain dried-fish extract which has high potency of flavor and taste, and is well-balanced first thick broth.SOLUTION: The method for producing dried-fish extract includes: a steam distillation step where the dried fish is distilled with steam to obtain steam-distilled substance a water extraction step where the dried fish is extracted after steam distillation to obtain water extract and a blending step where the steam-distilled substance is blended to the water extract.
