PROBLEM TO BE SOLVED: To recover necessary flavor components contained in a raw material without impairing them and to achieve the industrial mass production of high quality extract excellent in flavor.SOLUTION: An extract extracting apparatus includes an extraction container 1 which introduces steam from a steam injection nozzle 13 on the bottom to extract a charged raw material by vacuum steam distillation, a condenser 2 which condenses steam extracted from the extraction container 1 to liquefy distilled components, a storage tank 3 which stores the distilled components recovered in the condenser 2, a vacuum pump 4 which reduces the pressure inside the extraction container 1 through the condenser 2 and the storage tank 3, and a system 5 of supplying steam for production which supplies pressure-reduced steam to the extraction container 1.
