The present invention relates to cheese balsamic vinegar using curd made from milk, whey fermented vinegar and honey, and to a method of producing the same. According to the present invention, a method of producing cheese balsamic vinegar comprises the following steps of: (a) preparing a curd and honey mixture fermented by mixing curd and honey in a weight ratio of 5: 1 to 3 and performing anaerobic fermentation on the mixture； (b) performing aerobic fermentation on a mixture obtained by mixing the fermented curd and honey mixture with whey fermented vinegar in a weight ratio of 7: 2 to 4； (c) aging the mixture on which the aerobic fermentation is performed at 0 to 15°C for three to five weeks in an aerobic state； (d) evaporating moisture of the aged mixture； (e) aging the mixture of which the moisture is evaporated at 0 to 15°C for three or more months to produce cheese balsamic vinegar； and (f) injecting the aged cheese balsamic vinegar into a bottle and sterilizing the same. Also, in the cheese balsamic vinegar according to the present invention, curd, honey and whey fermented vinegar are mixed in a weight ratio of 5:1 to 3:2 to 4 and fermented.본 발명은 우유로부터 만들어지는 커드와 유청발효식초 그리고 꿀을 이용한 치즈 발사믹 식초 및 그 제조 방법에 관한 것이다.본 발명에 따른 치즈 발사믹 식초 제조방법은 (a) 커드와 꿀을 5 : 1~3의 중량 비율로 혼합하고 혐기발효시켜 발효된 커드와 꿀 혼합물을 제조하는 단계, (b) 상기 발효된 커드와 꿀 혼합물과 유청발효식초를 7 : 2~4의 중량 비율로 혼합한 혼합물을 호기발효시키는 단계, (c) 상기 호기발효된 혼합물을 0 ~ 15℃에서 3~5주 동안 호기 상태로 숙성시키는 단계, (d) 상기 숙성된 혼합물의 수분을 증발시키는 단계, (e) 상기 수분이 증발된 혼합물을 0 ~ 15℃에서 3개월 이상 숙성시켜 치즈 발사믹 식초를 만드는 단계 및 (f) 상기 숙성된 치즈 발사믹 식초를 병입하여 살균하는 단계를 포함한다. 또한, 본 발명에 따른 치즈 발사믹 식초는 커드와 꿀과 유청발효식초가 5 : 1~3 : 2~4의 중량 비율로 혼합되어 발효되는 것을 특징으로 한다.
