PROBLEM TO BE SOLVED: To provide udon noodle having efficient elasticity even when the addition amount of salts are smaller than conventional.SOLUTION: There is provided udon noodle containing wheat flour, an adhesive paste composition and water. The percentage of the adhesive paste composition to the total amount of the wheat flour and the adhesive paste composition is 0.1 to 1.5 mass%. The amount of (C) guar gum based on the total amount of (A) xanthan gum and (B) locust bean gum is, by mass ratio, 95:5 to 85:15 and the amount of (A) xanthan gum is larger than that of (B) locust bean gum.
