PROBLEM TO BE SOLVED: To provide a frozen dessert having good meltability in the mouth in spite of being mixed with albumen.
SOLUTION: The frozen dessert is obtained by mixing lactic acid fermentation albumen with guar gum and/or locust bean gum. Preferably the amount of lactic acid fermentation albumen mixed is 0.2-15% (in terms of solid content), and the total amount of guar gum and/or locust bean gum mixed is 0.05-0.5%.
