PROBLEM TO BE SOLVED: To provide rice flour noodle having excellent palate feeling and also having such a flavor as not to be obtained from conventional rice flour, which is produced by using rice flour or unpolished rice flour as ingredients for diversifying the flavor of rice noodle and to provide a method for easily producing the rice flour noodle.SOLUTION: The rice flour noodle is obtained by: charging the ingredients produced by adding pregelatinized rice flour or pregelatinized unpolished rice flour to rice flour or unpolished rice flour and further adding <1 wt.% of an alginic acid derivative to the mixture, into an agitating and mixing device and mixing the raw material while adding water thereto so as to prepare noodle dough to make noodle.
