PROBLEM TO BE SOLVED: To provide a sugar-coated food produced by icing a center layer containing dried fruits or dried vegetables, including a sugar-coated layer having smooth lick feeling and crunchy palate feeling without spoiling deliciousness of sugar, and a spherical center layer having chewing properties enough to make an eater feel a taste inherent in a raw material itself.
SOLUTION: The sugar-coated food has the sugar-coated layer having weight at least three times that of the center layer, and is structured as follows: the sugar-coated layer are formed into a multi-layer state while sugar layers and vitamin-C layers are alternately superimposed the sugar layers have crystal states respectively the average particle diameter of the crystal is 5-15 &mum the center layer contains at least one selected from the dried fruits and the dried vegetables, water-soluble gelatin, and at least one selected from pectin, carboxymethyl cellulose and pullulan and the center layer is subjected to heat treatment. The sugar-coated layer and the center layer of confectionery made of the food are different from each other in hardness and excellent in the variety of tactile impression.
