PROBLEM TO BE SOLVED: To provide a method for producing citrus fruits which contain functional components contained in the fruits of citrus fruits and are safe and very delicious by removing an agricultural chemical which adheres to or permeates the fruits of the citrus fruits and to provide foods.SOLUTION: The combination of an agricultural chemical, which combines with the tissues of the fruits, is eased by subjecting citrus fruits to freezing processing to freeze and denature the connective tissues of their fruits, so that the agricultural chemical is made to be soluble and easily separated from the tissues of the fruits. Washing with an organic solvent or a supercritical or subcritical operation is not carried out in this case, and consequently fat-soluble and useful functional components remain in the tissues of the fruits. Researches on the functions of citrus fruits are so far made and the functions are found to be useful, but, when the fruits are wholly turned to be a paste, an agricultural chemical still remains, and consequently the same has been not able to be used. According to the present invention, the fruits of citrus fruits are freezed to freeze and denature the tissues of the fruits, and heating and washing are carried out to remove an agricultural chemical. Consequently, citrus fruit-processed goods, which are functional and contain no agricultural chemical, can be produced.COPYRIGHT: (C)2012,JPO&INPIT【課題】 柑橘類の果実に付着あるいは浸透している農薬を除去し、果実に含まれる機能性成分を含む安全で風味豊かな柑橘類の製造方法と食品【解決手段】 柑橘類を冷凍処理することにより、果実の結合組織を凍結変性させ果実の組織と結合して存在している農薬の結合を緩め、農薬を可溶化させ、果実組織より容易に分離することができる。また、有機溶媒による洗浄あるいは超臨界、亜臨界の操作を行わないので、脂溶性の機能性有用成分は果実組織中に残存する。従来柑橘の機能性が研究され有用であることが知られていたが、果実全体をペースト化すると、農薬が残存し利用することが出来なかった。この発明により柑橘果実を凍結し果実組織を凍結変性させ、加熱、水洗し農薬を除去することができ、機能性のある農薬を含まない柑橘加工品を作ることが出来た。【選択図】 なし
