The present invention provides a food-safety vegetable/fruit cleansing process, which is a process applicable to washing vegetables/fruits of a medium or large quantity. The process includes five processing stages. The first stage is to flush and rinse a predetermined amount of vegetables/fruits in a clean water flow apparatus to carry out primary apparent surface treatment. The second stage is to place the vegetables/fruits in clear water, add a calcium ion solution and irradiate with an ultraviolet light for sterilization, and treat stains on the surface of the vegetables/fruits by applying an oscillator device that generate ultrasonic vibration so as to carry out secondary apparent surface treatment. The third stage is to place the vegetables/fruits in a water flow in which ozone (O3) is added to carry out primary aeration (oxidation) treatment in order to neutralize and remove agricultural chemicals remaining on the surface of the vegetables/fruits. The fourth stage is to carry out secondary ultraviolet sterilization on the vegetables/fruits under a water flow mode in which the vegetable/fruits are in reverse osmosis filtered pure water, and add a calcium ion solution in the water flow in order to carry out secondary aeration of the final residues of agricultural chemicals to achieve an effect of complete removal of the agricultural chemicals. The fifth stage is to subject the vegetables/fruits to centrifugal or horizontal position-shifting dehydration so as to complete the vegetable/fruit cleansing process to obtain food-safety vegetables/fruits which are effectively cleaned.
