The present invention relates to a method for producing a jelly-type dressing sauce to which non-heating fermented vinegar is added, which produces a functional sauce of optimized conditions capable of maintaining nutrition and enzyme activities by using non-heating fermented vinegar, and enables implementation of a gel-type sauce differentiated from conventional sauces by adding gelatin to the functional sauce. The jelly-type dressing sauce is produced by adding gelatin to a sauce made of non-heating fermented vinegar. The present invention comprises: a fermented vinegar preparing step of producing non-heating fermented vinegar by using any one selected from banana vinegar, pumpkin vinegar, or pineapple vinegar a saccharide mixing step of mixing saccharide composed of sugar, honey, and oligosaccharide in the non-heating fermented vinegar a gelatin adding step of soaking gelatin powder in water, and adding the same to the non-heating fermented vinegar mixed with the saccharide and a commercialization step of putting the non-heating fermented vinegar in which gelatin soaked in water and saccharide are mixed into a predetermined frame, and hardening the same under an environment maintained at 0 to 5°C.본 발명은 비가열 발효초를 이용하여 영양성과 효소활성이 유지될 수 있는 최적화된 조건의 기능성 소스를 제조하되 이러한 기능성 소스에 젤라틴을 첨가함으로써 기존과 차별화된 젤리 타입의 소스 구현을 가능하게 하는 비가열 발효초를 첨가한 젤리 타입의 드레싱 소스 제조방법에 관한 것으로, 비가열 발효초를 소재로 한 소스에 젤라틴을 첨가하여서 구성하되, 바나나 식초 또는 호박 식초 또는 파인애플 식초 중 선택된 어느 하나를 사용하여 비가열 발효초를 생성하는 발효초 준비단계와, 비가열 발효초에 설탕과 꿀과 올리고당으로 이루어진 당류를 혼합하는 당류 혼합단계와, 젤라틴 분말을 물에 불린 후 당류와 혼합된 비가열 발효초에 첨가하는 젤라틴 첨가단계와, 물에 불린 젤라틴과 당류가 혼합된 비가열 발효초를 일정 틀에 넣고 0∼5℃로 유지되는 환경하에서 경화시키는 제품화단계로 이루어진다.
