The present invention provides a method of using rice to produce polysaccharides and product thereof. The method mainly utilizes rice as raw material and includes the following steps: preparing rice bran, crushed rice, and intact rice in whole grain having the individual preparing proportion as 6:1:1; cooking the crushed rice into steamed rice; heating the rice bran with water to obtain the rice bran water containing 4.5% of rice bran; mixing the steamed rice with the rice bran water and adding amylase to promote the amylase liquefaction, so as to obtain a production liquid containing maltodextrin; then, forming aspergillus oryzae rice by steaming the intact rice and seeding the aspergillus oryzae for culture of 40 hours; and, mixing the aspergillus oryzae rice with the production liquid and adding protease to produce a rice hydrolysate material containing glucose and amino acid so as to obtain a clear rice hydrolysate; and, performing the sterilization, seeding the lactic acid, and then placing in standing position for fermentation to produce the fermented product containing polysaccharides.本發明係一種利用稻米生產多醣體方法及其產品,主要係以稻米為取材對象,準備米糠、碾碎的碎米、全顆粒完整的全米,個別取材比例是:6:1:1;將碎米煮熟為米飯,米糠加水加熱以取得含4.5%米糠的米糠水,使米飯與米糠水混合並添加澱粉酶幫助澱粉液化以取得含有麥芽糊精的製作液,另外全米經蒸熟、接種麴菌,培養40小時形成米麴飯,因而將米麴飯與製作液混合並添加蛋白酶以製出一包含有葡萄糖、氨基酸之米水解液原料,藉以取得澄清化的米水解液,經由滅菌、接種乳酸菌流程而予靜置發酵,即可製成含多醣的發酵產品。
