PROBLEM TO BE SOLVED: To provide a convenient food drying method and a drying apparatus, which keep the color, flavor and taste without reducing the intrinsic nutrition value of a food and which can suppress the deterioration of a food due to the breeding of saprophyte, and a food manufactured by using the former.SOLUTION: A food material such as an agricultural product, a marine product and an animal product are arranged in a dry warehouse is arranged in a dry warehouse 2 for accommodating and drying the food material, and upper and lower gases in the dry warehouse are circulated by duct fans 6 and 7 mounted on the side face in said dry ware house.
