PURPOSE: A producing method of yacon is provided to minimize inferior goods by producing the yacon in a jelly form, and to obtain a product with high quality and functionality. CONSTITUTION: Yacon is firstly dried to reduce 10% of the moisture content. The firstly dried yacon is washed. The washed yacon is secondly dried for 7-8 days to reduce 5% of the moisture content. The dried yacon is thirdly dried to reduce 20% of the moisture content. The first, second, and third drying processes are conducted in a ventilated house. The yacon is roasted in a bowl heated to 150-300 deg. C, and pulverized to obtain powder.
