PROBLEM TO BE SOLVED: To provide a simple food drying method and apparatus that can maintain the color, aroma, and taste of agricultural products such as cereals, beans, potatoes, vegetables, mountain vegetables, mushrooms, nuts and seeds, fruits, and herbs, or marine products such as seaweed, and fish and shellfish without decreasing the original nutritional values of these foodstuffs, and can prevent food deterioration due to the growth of various germs, and to provide a food produced using the apparatus.SOLUTION: A dried food is obtained by: placing a foodstuff such as an agricultural product or a marine product in a dry warehouse that stores and dries the food stuff; circulating upper and lower gases in the dry warehouse by a duct fan provided on a side surface inside the dry warehouse; and dehumidifying and drying the foodstuff at 60°C or less and at a relative humidity of 60% or less under atmospheric pressure.SELECTED DRAWING: None【課題】穀物、豆類、芋類、野菜、山菜、きのこ、種実類、果物、ハーブ等の農産物、又は、海藻類、魚介類等の海産物について、これらの食材本来の栄養価を低減させることなく、色や香り、食味を維持し、かつ、雑菌の繁殖による食品の劣化を抑制することができる簡便な食品の乾燥方法及び乾燥装置並びにそれを用いて製造された食品を提供する。【解決手段】農産物又は海産物の食材を、前記食材を収容して乾燥する乾燥庫内に配置し、前記乾燥庫内の側面に設けられたダクトファンにより該乾燥庫内の上部と下部のガスを循環させて、大気圧下、温度60℃以下、相対湿度60%以下で除湿乾燥し、乾燥食品を得る。【選択図】なし
