The present invention provides a method for manufacturing a salicornia herbacea fermentation drink comprising unpolished rice as a substrate and a salicornia herbacea drink comprising unpolished rice as a substrate, the invention comprising: a pulverization step (first step) of mixing salicornia herbacea, unpolished rice and purified water and pulverizing the same; an enzyme addition step (second step) of adding diastase to the salicornia herbacea mixture obtained in the first step; an alcohol fermentation step (third step) of inoculating distiller′s grains to the salicornia herbacea mixture added with diastase obtained in the second step and fermenting the same; a salicornia herbacea fermented liquid manufacturing step (fourth step) of inoculating a vinegar starter to the alcohol fermented liquid obtained in the third step and fermenting the same and manufacturing a salicornia herbacea fermented liquid; a diluting agent mix step (fifth step) of mixing a diluting agent to the salicornia herbacea fermented liquid obtained in the fourth step wherein the diluting agent comprises: 1,500 to 2,500 wt% of purified water; 30-50 wt% of glucose; 100 to 150 wt% of liquid fructose; 20 to 50 wt% of mango concentrate; 0.1 to 1.0 wt% of potassium chloride; 0.2 to 0.3 wt% of magnesium carbonate; 0.1 to 1.0 wt% of calcium lactate; 0.1 to 1.0 wt% of sodium glutamate; 1 to 5 wt% of sodium citrate; 1 to 5 wt% of vitamin; and 1 to 5 wt% of mango flavor; and a sterilization and package step (sixth step) of filtering the mixture mixed with a diluting agent in the fifth step, and sterilizing and packaging the same.본 발명은 함초, 현미, 정제수를 혼합하여 분쇄하는 분쇄단계(제1단계); 상기 제1단계에서 얻어진 함초 혼합물에 전분당화효소를 첨가하는 효소첨가단계(제2단계); 상기 제2단계에서 얻어진 전분당화효소가 첨가된 함초 혼합물에 주모 접종 및 발효하는 알코올발효단계(제3단계); 상기 제3단계에서 얻어진 알코올발효액에 종초를 접종 및 발효하여 함초 발효원액 제조단계(제4단계);상기 제4단계에서 얻어진 함초 발효원액 100 중량%에 정제수 1500~2500 중량%, 포도당 30~50 중량%, 액상과당 100~150 중량%, 망고농축액 20~50 중량%, 염화칼륨 0.1~1.0 중량%, 탄산마그네슘 0.2~0.3 중량%, 젖산칼슘 0.1~1.0 중량%, 글루타민산나트륨 0.
