PROBLEM TO BE SOLVED: To provide unrefined soysauce-containing liquid seasoning containing unrefined soysauce paste, and oil-and-fat, homogeneously dispersing minute drops of the oil-and-fat to be mixed with the unrefined soysauce paste so as to mask fermented and matured flavor specific to the unrefined soysauce to have mild, creamy and favorable taste and cause no separation on the oil-and-fat even when long stored.SOLUTION: The unrefined soysauce-containing liquid seasoning is produced by subjecting matured unrefined soysauce to mesh filtration with a commercially-available pulper finisher, mixing 20-60% (v/v) of the unrefined soysauce paste from which wheat husks, soybean husks and the like falling in the unrefined soysauce are removed, with 5-50% (v/v) of the oil-and-fat, and subjecting the mixture to homogenization with a milder or a homogenizer.COPYRIGHT: (C)2010,JPO&INPIT【課題】醤油もろみペーストと油脂とを含有し、該油脂を微滴に均一に分散混合させることで、醤油もろみ独特の発酵熟成した風味がマスキングされ、マイルド、かつ、クリーミーで良好な呈味を有し、長期保存しても油脂の分離がない醤油もろみ含有液状調味料を得る。【解決手段】熟成した醤油もろみを、市販のパルパー・フィニッシャーにてメッシュ濾過し、もろみ中に含まれる小麦外皮、大豆外皮などが除去された醤油もろみペースト20~60%(v/v)と、油脂5~50%(v/v)とを混和し、マイルダー又はホモジナイザーによる均質化処理を行なう。【選択図】なし
