The present invention relates to a method for manufacturing a mung bean sweet rice drink by using steamed mung beans, rice koji, a liquefying enzyme of malt, a diastatic enzyme, and a protease as a method for solving problems of processing a sweet rice drink caused by a protein source contained in mug beans. The method includes the steps of: removing husks of dried mung beans and immersing the mung beans in water at room temperature； removing water in which the mung beans are immersed, adding purified water to the mung beans, and grinding the mung beans with a wet-type grinder； gelatinizing and cooling the grounded mung bean liquid； and adding rice koji into the gelatinized mung beans and performing first saccharification. According to the present invention, saccharification efficiency is high, compared to a case that only malt is used, as 45-62% of starch and 20-28% of protein which are contained in the mung beans are decomposed by enzymes by adding malt into the first saccharification liquid； and the concentration of amino acid is increased as protein contained in the mung beans is decomposed. Therefore, the mung bean sweet rice drink has an enhanced taste, high antioxidant activity, and high variability and mutagenicity resistance.본 발명은 녹두에 함유된 단백질원으로 인한 식혜 가공의 문제점을 해결하는 방법으로 증숙 녹두에 쌀코지와 엿기름의 액화 효소, 당화 효소, 단백질 분해 효소를 이용하여 녹두 식혜를 제조하는 방법이다. 건조 녹두를 거피하여 실온에서 침지하는 단계와, 상기의 침지 녹두의 물을 제거하고 녹두에 정제수를 넣어 습식 분쇄기로 분쇄하는 단계와, 상기의 녹두 분쇄 물을 호화시켜 냉각하는 단계와, 상기의 호화 녹두에 쌀코지를 넣고 1차 당화 시키는 단계와, 1차 당화 액에 엿기름을 첨가하여 녹두에 함유 되어 있는 전분질 45~62%, 단백질 20~28%를 효소 분해하므로 엿기름만 사용하였을 때 보다 당화 효율이 높고, 녹두 중에 함유된 단백질을 분해하여 아미노산 농도가 증가됨으로써 맛의 상승효과, 항산화 활성, 항변이성 및 변이원성의 효과가 높은 녹두가루를 이용한 식혜 음료의 제조 방법을 제공하고자 한다.
