PROBLEM TO BE SOLVED: To provide a method of processing dried noodles that can be eaten by simply immersing the rod-shaped dried thin noodles in hot water, and an apparatus therefor, and to provide a method of processing dried grains or dried beans that can be eaten by simply immersing grains such as millet, Japanese millet, polished rice, rice with the germ, unpolished rice, wheat and corn, and beans such as soybeans, azuki beans and green peas in hot water, and an apparatus therefor.SOLUTION: Thin noodles C in a raw noodle state put into an autoclave (A) kept at a high temperature and a high pressure are steamed with high-temperature/high-pressure steam pressure to change the property of the carbohydrate thereof from β (beta) to α (alpha) to produce dried thin noodles. Grains or beans made to be saturated with water by absorbing water are put into an autoclave and heated with high-temperature/high-pressure steam pressure, and thereafter the inner pressure of the high pressure oven is reduced to a vacuum state to obtain dried grains or dried beans.COPYRIGHT: (C)2014,JPO&INPIT【課題】棒状態の乾燥ソーメンを、熱湯の内部に乾燥ソーメンを入れるだけで食べることが出来る乾燥麺類の加工方法、及びその装置を提供する。また、粟、稗、白米、胚芽米、玄米、麦、トウモロコシなどの穀類、及び大豆、小豆、エンドウ豆などの豆類を、熱湯の内部に穀類を入れるだけで食べることが出来る乾燥穀類又は乾燥豆類の加工方法、及びその装置を提供する。【解決手段】生麺状態のソーメンCを高温高圧のオートクレーブAの内部に入れ、高温高圧の蒸気圧にて蒸して、炭水化物の性質をβ(ベータ)からα(アルファ)に変化させて、乾燥ソーメンを形成する。また、水分を飽和状態に吸収させた穀類又は豆類を、オートクレーブの内部に入れ、高温高圧の蒸気圧にて加熱した後、高圧釜の内部圧力を真空状態に減圧することにより乾燥穀類又は乾燥豆類を得る。【選択図】図1
