PROBLEM TO BE SOLVED: To provide a method and apparatus for producing noodles, cereals, pulses, unshelled shellfish, instant noodles or the like which can be eaten only by putting in hot water.SOLUTION: Dry somen noodles, cereals or pulses are produced by putting fresh somen noodles or cereals or pulses saturated with moisture in a high-pressure pan followed by heating at high temperature and high pressure, then decompressing the inside of the high-pressure pan to a vacuum state to dry the noodles or the like. Unshelled shellfish is heated with shells a being forcedly closed by use of a clothespin c, and then dried.
