PROBLEM TO BE SOLVED: To provide a vegetable fried food capable of being produced industrially stably while retaining easiness for eating and a sense of materials of the vegetables.SOLUTION: The method for production includes: a step of boiling vegetables with much fiber a pretreatment step for cutting the vegetables into pieces of 15-50 mm in length, a molding step for connecting and molding the boiled vegetables cut into pieces of 15-50 mm in length with a filler including vegetable pieces of 10 mm in length or smaller, and a heating step for frying the molded vegetables and filler.COPYRIGHT: (C)2012,JPO&INPIT【課題】 食べ易さと野菜の素材感を有しながらも、工業的に安定生産できる野菜フライ品を提供する。【解決手段】 繊維の多い野菜を茹でる処理と、長径15mm~50mmに切断する処理を行う前処理工程、長径15~50mmに切断され茹でられた野菜を、長径10mm以下の野菜小片を含むつなぎで連結し成型する成型工程、成型した野菜とつなぎをフライ調理する加熱工程を施すことを特徴とする。【選択図】 なし
