PROBLEM TO BE SOLVED: To provide a method for producing a seasoning powder having flavor of dried fish in high titer, and also having excellent preservation stability and dispersibility.SOLUTION: The essence powder of the dried fish providing rich flavor of the dried fish, and smooth touch feeling to the mouth, having good dispersibility in water, almost prevented from being raised, and having excellent operability is obtained by extracting the dried fish, carrying out wet milling without carrying out solid-liquid separation, subjecting the milled product to homogenization treatment, adding powderizing base material thereto, dissolving carbon dioxide gas therein, and subjecting the resultant mixture to spray drying by using a pressurized nozzle-type sprayer.COPYRIGHT: (C)2009,JPO&INPIT【課題】魚節類の風味を高力価に有し、保存安定性および分散性に優れた調味料粉末を提供する。【解決手段】魚節類を抽出し、固液分離することなく湿式粉砕した後に均質化処理し、粉末化基材を添加して炭酸ガスを溶解させて加圧ノズル型噴霧機を用いて噴霧乾燥することにより、魚節類の風味が豊かであり口当たりがなめらかで水への分散性がよく、また粉立ちが少なく作業性に優れた魚節類エキス粉末が得られる。【選択図】なし
