There is described a novel method for processing plant material to produce a cellulose- containing material. The process comprises the steps of: (i) contacting particles of plant material with a peroxide agent and water； (ii) allowing the mixture from step (i) to hydrate until the pH of the mixture is pH 4.5 or less； and (iii) homogenising the mixture from step (ii) and isolating the cellulose-containing-material, and wherein the particles of plant material in step (i) have an average particle diameter of from 10 μm to 800 μm.L'invention décrit un nouveau procédé de traitement de matière végétale pour produire un matériau contenant de la cellulose. Le procédé comprend les étapes consistant à : (i) mettre en contact des particules de matière végétale avec un agent de type peroxyde et de l'eau ； (ii) permettre au mélange de l'étape (i) de s'hydrater jusqu'à ce que le pH du mélange soit de 4,5 ou moins ； et (iii) homogénéiser le mélange obtenu à l'étape (ii) et isoler le matériau contenant de la cellulose, les particules de matière végétale à l'étape (i) présentant un diamètre moyen de particule de 10 µm à 800 µm.
