Disclosed is a process for the recovery of protein and fibre as contained in bulbs of a plant belonging to the species Allium cepa. The process is conducted on a mass comprising material of such bulbs. Advantageously, this material comprises residues of processing the bulbs for the food industry. The material is subjected to steps comprising mechanical treatment, pH modification steps and separation steps. Ultimately a dry product comprising the protein is obtained, as well as a fibre-containing composition.L'invention concerne un procédé de récupération de protéines et de fibres comprises dans des bulbes d'une plante appartenant à l'espèce Allium cepa. Le procédé est mis en œuvre sur une masse comportant un matériau de tels bulbes. Avantageusement, ce matériau comporte des résidus de traitement des bulbes pour l'industrie alimentaire. Le matériau est soumis à des étapes comportant un traitement mécanique, des étapes de modification du pH et des étapes de séparation. On obtient en dernier ressort un produit sec comportant la protéine, ainsi qu'une composition comprenant des fibres.
