PROBLEM TO BE SOLVED: To provide a novel vanilla flavor improver that reproduces a vanilla extract feeling of a vanilla flavor, and has a good flavor with a natural feeling and quality feeling of vanilla extract, and a vanilla flavor composition containing the same.SOLUTION: It is found out that the adding of dimethyl trisulfide to a vanilla flavor makes it possible to give a vanilla extract feeling not enough in the conventional vanilla flavor: specifically, a good flavor with a natural feeling and quality feeling of vanilla extract.SELECTED DRAWING: None【課題】バニラフレーバーのバニラエキス感を再現し、バニラエキスの有する天然感および高級感のある良質な香味を有する新規なバニラフレーバーの香味改善剤および、これを含有させたバニラフレーバー組成物を提供する。【解決手段】ジメチルトリスルフィドをバニラフレーバーに添加することにより、従来のバニラフレーバーに不足しているバニラエキス感、詳しくは、バニラエキスの有する天然感および高級感のある良質な香味が付与されることを見いだした。【選択図】なし
