PURPOSE: A red pepper paste composition containing coriadrum sativum, and a producing method thereof are provided to secure the excellent the flavor, the taste, and the palatability of the composition. CONSTITUTION: A producing method of a red pepper paste composition comprises the following steps: crushing dried coriadrum sativum to obtain powder； crushing fresh coriadrum sativum, and filtering to obtain an extract； and inserting 1~7wt% of coriadrum sativum powder and 1~4wt% of coriadrum sativum extract into the red pepper paste composition.본 발명은 고수를 함유하는 것을 특징으로 하는 고추장 조성물에 관한 것으로, 본 발명의 고추장 조성물은 외관, 향, 맛 및 전반적인 기호도가 우수하고, 이를 식품에 적용시 식품의 품질적성을 훼손시키지 않으면서 외관, 향, 맛 및 종합적인 기호도가 높은 식품을 제조할 수 있다.
