The present invention relates to a method for extracting polyphenol from unripe persimmon, and specifically, to a method for extracting polyphenol from unripe persimmon, which includes a step of pressurizing and hot-water extracting unripe persimmon, and a step of refining the obtained pressurized hot water extract using an adsorption resin. An objective of the present invention is to provide a method for extracting polyphenol with tannin from unripe persimmon which contains a large amount of tannin, a component causing astringency.본 발명은 미성숙 감으로부터 폴리페놀을 추출하는 방법에 관한 것으로서, 구체적으로 미성숙 감으로부터 가압 열수 추출하는 단계 및 상기 가압 열수 추출물을 흡착수지를 이용하여 정제하는 단계를 포함하는 미성숙 감으로부터 폴리페놀을 추출하는 방법에 관한 것이다.
