PROBLEM TO BE SOLVED: To provide a rice quality improver capable of improving boiled rice of nonglutinous rice or glutinous rice effectively by a simple method and to provide a method of application thereof, a cooking method of rice or the like.SOLUTION: A rice quality improver containing lemon pericarp paste (product obtained by subjecting lemon squeezed juice residue to wet milling, or the like) as an active ingredient is added (for example, the amount of 0.6-3.5 wt.% to raw rice is added into dipping water for cooking) at the cooking time of nonglutinous rice or glutinous rice.
