PURPOSE: A production method of rice embryo bud grain syrup is provided to have unique taste and flavor with aromatic taste, and to have high contents of proteins and vitamins. CONSTITUTION: Rice with embryo buds is washed and is soaked in purified water for 5 hours(S10). The soaked rice with embryo buds is cooked by steaming for an hour(S20). The cooked rice with embryo buds is mixed with taffy oil water which is composed of taffy oil and water, and is fermented for 12 hours at 60-70 deg. C for producing sikhye(traditional fermented rice drink) water(S30). The sikhye water is boiled in a caldron, and is concentrated by agitating for 4 hours(S41). Ginseng powder is added into the concentrated sikhye water, and grain syrup is produced by concentrating for an hour(S42). Taffy oil which is contained in a saccharification process is 2.5kg based on the rice with embryo buds in a soaking process. 4 tea spoons of ginger powder are added into a concentration process. [Reference numerals] (S10) Soaking step； (S20) Cooking step； (S30) Saccharifying step； (S41) First concentration step； (S42) Second concentration step본 발명은 쌀눈 조청 제조 방법에 관한 것으로, 보다 상세하게는 불림공정, 익힘공정, 당화공정, 농축공정의 순차적인 공정을 통해 조청을 제조하되, 쌀눈이 포함된 쌀눈 쌀을 조청의 재료로 이용하고, 상기 쌀눈 쌀의 특성에 맞도록 각 공정에서의 가공 조건을 구체적으로 제시함으로써 맛과 향이 독특하고 고소하면서도 단백질 및 비타민의 함유량이 높아 영양이 우수한 쌀눈 조청 제조 방법에 관한 것이다. 본 발명에 따른 쌀눈 조청 제조 방법은, 쌀눈이 포함된 쌀눈 쌀을 세척 후 정수에 5시간 동안 불리는 불림공정과； 상기 불림공정을 통해 불려진 쌀눈 쌀을 증기로 1시간 동안 쪄서 익히는 익힘공정과； 상기 익힘공정을 통해 익혀진 쌀눈 쌀을 엿기름과 물로 이루어진 엿기름물에 혼합한 후 60℃ 내지 70℃의 온도로 12시간 동안 삭혀 식혜물을 만드는 당화공정과； 상기 당화공정을 통해 만들어진 식혜물을 솥에 넣고 끓여 농축시키는 농축공정을； 포함하되, 상기 농축공정은, 상기 식혜물을 4시간 동안 교반하며 농축시키는 제1농축공정과, 상기 제1농축공정을 통해 농축되는 식혜물에 생강가루를 첨가한 후 1시간 동안 더 농축시켜 조청으로 만드는 제2농축공정으로 이루어진 것을 특징으로 한다.
