PROBLEM TO BE SOLVED: To provide extract prepared from dried du zhong leaves, having "apparently tea-like" flavor based on bitter, astringent, and acidic taste inherent in du zhong, and presenting pure taste without harshness and/or body feeling.
SOLUTION: The extract is prepared from the dried du zhong leaves, and includes aspartic acid concentration of 0.3-1.8 mg/L, glutamic acid concentration of 0.3-1.3 mg/L, and sucrose concentration of 150-500 mg/L when the brix of the extract is 0.15 wt.%.
