PROBLEM TO BE SOLVED: To provide a recombined milk in which the foreign taste, off-flavor, and offensive taste unique to recombined milk in comparison with cow milk are reduced so as to have taste and flavor comparable to raw milk a method for producing the same and a packed milk or a milk-containing beverage using the recombined milk having improved taste and flavor.SOLUTION: By component adjustment, a raw material recombined milk has a fat concentration of more than 2.5% and less than 4.5% and a nonfat milk solid concentration of more than 6.0% and less than 11.0%. The raw material recombined milk is homogenized under an ultra high pressure of 50 MPa or more and 150 MPa or less, so that the foreign taste, off-flavor, and offensive taste unique to recombined milk are reduced and a recombined milk having taste and flavor comparable to raw milk is produced. Furthermore, a packed milk or a milk-containing beverage having excellent taste and flavor is prepared using the thus prepared recombined milk having improved tase and flavor. Although no raw milk or cow milk is added to the recombined milk, the recombined milk has a refreshing flavor similar to cow milk, with reduced foreign taste, off-flavor, and offensive taste unique to recombined milk, achieving improved emulsion stability.COPYRIGHT: (C)2014,JPO&INPIT【課題】牛乳に比較した、還元乳のもつ異味、異臭、異食感を低減し、生乳感の高い味覚及び風味を有する還元乳及びその製造方法を提供すること、及び、該味覚及び風味の改善された還元乳を用い、容器詰乳又は乳入り飲料を提供すること。【解決手段】脂肪分濃度が2.5%より高く且つ4.5%未満、且つ無脂乳固形分濃度が6.0%より高く且つ11.0%未満となるように成分調整された原料還元乳を、50MPa以上、150MPa以下の超高圧下で均質化処理することにより、還元乳のもつ異味、異臭、異食感を低減し、生乳感の高い味覚及び風味を有する還元乳を製造する。また、本発明は、本発明において調製された改善された味覚及び風味を有する還元乳を用いて、優れた味覚及び風味を有する容器詰乳又は乳入り飲料を調製する。本発明の還元乳は、生乳や牛乳を添加していない還元乳でありながら、牛乳のようなさっぱりとした香味が実現でき、還元乳のもつ異味、異臭、異食感を低減し、且つ乳化安定性も向上した還元乳である。【選択図】なし
