PURPOSE: A method for manufacturing milk with improved flavor is provided to improve flavor of the milk by removing bubbles due to congestion of the raw milk in a raw milk storing tank, and to use nitrogen gas for a manufacturing process without a nitrogen substitution tank. CONSTITUTION: A method for manufacturing milk with improved flavor comprises a step for directly dispersing nitrogen in raw milk and a step for reducing the concentration of dissolved oxygen in the raw milk to 2 ppm. The nitrogen gas is directly mixed in the raw milk with pressure of 3 ~ 4 kg/cm^2. The method for manufacturing milk includes a step for substituting nitrogen gas for dissolved oxygen by injecting the nitrogen gas. The nitrogen gas is injected to the sterilized milk in a sterilized milk storage tank(10) with pressure of 1.5 ~ 2.5 kg/cm^2.본 발명은 향미가 증진된 우유의 제조방법에 관한 것으로, 보다 상세하게는 목장으로부터 운반되어 온 원유를 원유보관탱크로 공급하는 수유 공정에서 질소가스를 직접 혼합 분산시키는 질소치환공정을 포함하는 향미가 증진된 우유의 제조방법에 관한 것이다.
