PURPOSE: A controlling method of a kimchi refrigerator is provided to accurately read the temperature of kimchi inserted into the refrigerator for property aging the kimchi. CONSTITUTION: A controlling method of a kimchi refrigerator comprises the following steps: inserting a product to store, and stopping a load； detecting the internal temperature； and performing an aging operation by setting the internal temperature into the temperature of the product. The internal temperature is obtained by calculating an average of detected temperature values for a constant time.본 발명은 김치 냉장고에 들어오는 김치 품온을 정확하게 리딩(Reading)하여 김치를 적절히 숙성시키기 위한 것으로, 저장물이 투입된 이후 부하를 정지하는 단계； 일정 시간 경과 후 고내온도를 감지하는 단계； 상기 고내온도를 저장물 온도로 추정하여 숙성 운전을 수행하는 단계；를 포함한다.
