The present invention relates to a method for making pork cutlet with tender meat. More specifically, the present invention comprises: a pork cutting step of cutting pork; a tenderizing step of tenderizing the pork which has been cut in the port cutting step; a rough roasting step of roughly roasting the tenderized pork which has been tenderized in the tenderizing step; a seasoning coating step of immersing the pork, which has been roughly roasted in the rough roasting step, in liquid seasoning; a frying step of coating the pork, which has been coated with the liquid seasoning in the seasoning coating step, with bread crumbs, and then frying the pork in oil; and an oil removing step of removing oil contained in the pork cutlet which has been made in the frying step. The pork cutlet with tender meat made through the above steps is sufficiently tender and juicy since the pork is previously cooked through rough roasting, before fried, to reduce the frying time. Further, the pork cutlet has improved texture and taste since the pork is coated with the liquid seasoning before roughly roasted.본 발명은 육질이 부드러운 돈가스의 제조방법에 관한 것으로, 더욱 상세하게는 돈육을 절단하는 돈육절단단계, 상기 돈육절단단계를 통해 절단된 돈육을 부드럽게 하는 연육단계, 상기 연육단계를 통해 부드러워진 돈육을 초벌구이하는 초벌구이단계, 상기 초벌구이단계를 통해 초벌구이된 돈육을 양념액에 함침하는 양념액코팅단계, 상기 양념액코팅단게를 통해 양념액이 코팅된 돈육에 빵가루를 도포한 후에 기름에 튀기는 튀김단계 및 상기 튀김단계를 통해 제조된 돈가스에 함유된 기름을 제거하는 기름제거단계로 이루어진다.상기의 과정을 통해 제조되는 육질이 부드러운 돈가스는 튀기기 전에 초벌구이를 통해 돈육을 미리 익히기 때문에, 튀김 시간이 줄어들어 육질이 부드럽고 육즙이 풍부하게 함유되어 있으며, 초벌구이 전에 염지액이 도포되어 식감 및 맛이 더욱 향상된다.
