PROBLEM TO BE SOLVED: To provide a method and a system for postharvest ripening treatment of bananas that can considerably reduce a postharvest ripening treatment cost.SOLUTION: After a step for activating the respiration of unripened bananas, the atmospheric temperature of a postharvest ripening treatment chamber is regulated to a preset specific low temperature value suitable for restraining ripening of bananas, at least around the bananas during a temperature drop step for restraining ripening of the respiration activated bananas. The atmosphere flow rate of the postharvest ripening treatment chamber in which the temperature drop step is performed, is controlled such that the flesh temperature of the bananas approaches the low temperature value with the lapse of time during the temperature drop step at least around the bananas.
