PURPOSE: An aging controlling method of a kimchi storage tank is provided to offer the various kimchi flavors by the taste of users, by controlling the load when setting an aging mode of the kimchi storage tank. CONSTITUTION: An aging controlling method of a kimchi storage tank comprises the following steps: setting the aging temperature of the kimchi storage tank by the kind of kimchi, the aging time, the salinity, and the desired aging degree(S10)； determining the upper limit and the lower limit of the aging temperature(S20)； determining the controlling temperature by the upper limit and the lower limit of the load applied to the kimchi storage tank(S30,S40)； and performing an aging process by the controlling temperature(S50).본 발명은 김치저장고의 숙성 제어방법에 관한 것으로서, 김치저장고의 숙성 선택시 김치의 종류, 숙성시간, 염도, 익힘정도 및 김치 담글 때의 김치품온에 따라 숙성온도를 보상하여 부하를 제어함으로써 개인의 취향에 따른 김치맛을 제공할 수 있다.
