FIELD: food industry.SUBSTANCE: invention relates to the food industry. Composition of liquid beverage concentrate, including liquid beverage concentrate, including acidifier, flavoring agent, high-intensity sweetener, soluble fiber, preserving agent and water, wherein the soluble fiber is about 20–60 wt% of the entire concentrate with a pH in the range of about 1.2 to about 4.0. Soluble fiber is selected from maize fiber, polydextrose and combinations thereof； and preserving agent is approximately 0.01–0.3 wt% beverage concentrate. Concentrate has viscosity between approximately 25 and 70 cP (Brookfield viscosity (spindle LV2, at 30 rpm at 25 °C)). Composition of liquid beverage concentrate, including liquid beverage concentrate, including acidifier, flavoring agent, high-intensity sweetener, soluble fiber, preserving agent and water, wherein the soluble fiber is about 20–60 wt% of the entire concentrate with pH in the range of about 1.2–6.5. Soluble fiber is selected from maize fiber, polydextrose and combinations thereof； and preserving agent is polysorbate and ranges from approximately 0.01 to about 0.3 wt% of beverage concentrate. Concentrate has viscosity between approximately 25 and 70 cP (Brookfield viscosity (spindle LV2, at 30 rpm at 25 °C)).
