The present invention relates to a method for producing jam. More specifically, the present invention relates to a method for producing jam by heating and concentrating an extract extracted from components of fruits through osmotic pressure by mixing sugar and salt with the fruits. To this end, a method for producing jam from fruits used as raw ingredients of the jam of the present invention comprises: a pretreating step of sterilizing microorganisms of the fruits, washing foreign materials such as attached dirt by using clean water, and pretreating the fruits into fruits having foreign materials removed therefrom by drying moisture therefrom at room temperature； an extracting step of mixing sugar and salt with the fruits having foreign materials removed therefrom in the pretreating step, and producing an extract by extracting components of the fruits through osmotic pressure； a heating and concentrating step of heating and concentrating the extract in the extracting, and treating the extract into a jam-state viscous material； and a commercializing step of cooling the jam-state viscous material in the heating and concentrating step at room temperature, and producing a jam product by packing the same.본 발명은 잼을 만드는 방법에 관한 것으로, 더욱 상세하게는 과일류에 설탕과 소금을 혼합하여 삼투압현상에 의해서 과일류의 성분을 추출한 추출액을 가열농축하여 잼을 만드는 방법의 제공에 관한 것이다.이를 위하여 본 발명은, 잼의 원료가 되는 과일류로부터 잼을 만드는데 있어서, 상기 과일류를 미생물의 살균처리와 깨끗한 용수로 부착된 먼지와 같은 이물질을 세정처리한 다음, 상온에서 수분을 건조하여 이물질이 제거된 과일류로 전처리단계와, 상기 전처리단계에서 이물질이 제거된 과일류에 설탕과 소금을 혼합하여 삼투압현상에 의해서 과일류의 성분을 추출하여 추출액을 생산하는 추출단계와, 상기 추출단계에서 추출액을 가열농축하여 잼 상태의 점성물질로 처리하는 가열농축단계와, 상기 가열농축단계에서 잼 상태의 점성물질을 상온으로 냉각한 다음 포장하여 잼 제품을 만드는 제품화단계로 구성된 것이 특칭이다.
