The present invention relates to a method for making kimchi by extracting active ingredients of Phellinus Linteus and Korean Dendropanax, which are beneficial for a human body, to be easily used and adding extracts of Phellinus Linteus and Korean Dendropanax to make kimchi. A method for extracting a Phellinus Linteus extract, according to the present invention, comprises the following steps: heating 5-8% of Phellinus Linteus powder at a temperature of 90-100 deg. C for 30 minutes; cooling the heated Phellinus Linteus powder and mixing the same with 3-4 liters of water at 90-100 deg. C; and putting the water mixed with the Phellinus Linteus powder in an extraction tank, heating the extraction tank at a temperature constantly maintained within 90-100 deg. C for 5-6 hours, and extracting an extract. In addition, a method for preparing a Korean Dendropanax extract, according to the present invention, comprises the following steps: finely splitting 3-6% of Korean Dendropanax hardwood; mixing the hardwood and 3-4% of stems of Korean Dendropanax; cleanly washing the stems and the hardwood of Korean Dendropanax; putting the washed stems and hardwood into a double boiler, and boiling the stems and hardwood down for 48 hours after putting water thereinto; cooling the boiled stems and hardwood; picking up and drying the stems and hardwood, and boiling the same down once more with the stems and hardwood which are boiled down twice more; and extracting an extract by picking up the stems and hardwood. Furthermore, the method for making kimchi according to the present invention comprises a step of mixing the extracts with kimchi seasoning at a weight ratio of 10:10:80-15:15:70. Therefore, the kimchi manufactured by the present invention has an antidiabetic function and effects of treating hypertension and hyperlipidemia, and there is a case that tongue cancer, prostate cancer, and the like are treated by the Korean Dendropanax extract.
