PROBLEM TO BE SOLVED: To provide a processed food for persons having difficulty in chewing and persons having slight difficulty in chewing, and to provide a method for measuring texture by which physical properties thereof can accurately be evaluated.SOLUTION: The processed food for the persons having the difficulty in chewing and the persons having the slight difficulty in chewing is provided with: a step of mincing a food material a mixing step of adding and mixing at least starch, oil-and-fat, thickening polysaccharides and water to the food material, and providing a mixed material a molding step of forming the mixed material into a prescribed shape, and affording a mixed molded material and a heat-treating step of subjecting the mixed molded material to a heat treatment, and providing an edible form.
