PROBLEM TO BE SOLVED: To provide a method for producing new sheet-like seafood processed food eatable plain and also usable as various kinds of food material.SOLUTION: The method for producing sheet-like seafood steped food includes: a forming step where small or young anchovies whose squamae are not grown up are put in a water tank 10, the anchovies are scooped by a sheet 11 to form a sheet-like food material 12 while smoothing the anchovies a heating step, performed subsequently, where the sheet-like food material 12 is disposed on a container 13 filled with boiling water and is steamed and a drying step where the sheet-like food material 12 after steamed is cooled by a blower and dried in a drying chamber. The sheet-like seafood processed food is produced by steaming and therefore delicious even when eaten plain, and is suitable as snack not only for adults but also for children or infants.COPYRIGHT: (C)2011,JPO&INPIT【課題】そのまま食することができるだけでなく、様々な食材としても使用することができる新たなシート状水産加工食品の製造方法を提供する。【解決手段】成形工程は、鱗が未成長状態のカタクチイワシの仔魚または稚魚を水槽10に入れ、シート体11によりすくい、均しながらシート状食品材12を成形する。次に行う加熱工程は、シート状食品材12を沸騰させた湯を入れた容器13上に配置して蒸す。乾燥工程は、蒸した後のシート状食品材12を送風機による冷却を行い、乾燥室にて乾燥させる。このシート状水産加工は、蒸されていることで、そのまま食しても美味しいので、大人だけでなく子供や幼児のおやつにも好適である。【選択図】図1
