PROBLEM TO BE SOLVED: To provide an alcohol-containing solution containing an abundance of 3-mercaptohexan-1-ol (3MH) having an excellent aroma, and a production method thereof, and to provide production methods of a flavoring agent and a drink with an enhanced aroma, employing the alcohol-containing solution containing an abundance of 3MH.SOLUTION: A production method of a solution containing 3MH and an alcohol comprises inoculating a raw material aqueous solution containing S-(3-hexan-1-ol) glutathione and S-(3-hexan-1-ol)-L-cysteine with a lactic acid bacterium and yeast to produce 3MH and alcohol. The raw material aqueous solution comprises a grape skin extract. The lactic acid bacterium is a lactic acid bacterium that can convert S-(3-hexan-1-ol)glutathione to S-(3-hexan-1-ol)-L-cysteine. In the production method of the solution containing 3MH and the alcohol, after inoculating the raw material aqueous solution with the lactic acid bacterium and conducting fermentation for 0 to 6 days, the aqueous solution is inoculated with the yeast and alcohol fermentation is conducted.【課題】優れた芳香性を有する3-メルカプトヘキサン-1-オール(3MH)を豊富に含有するアルコール含有溶液とその製造方法、3MHを豊富に含有するアルコール含有溶液を用いた着香剤及び香りを改善した飲料の製造方法の提供。【解決手段】S-（3－ヘキサン-1-オール）グルタチオン及びS-（3-ヘキサン-1-オール）-L-システインを含有する原料水溶液に乳酸菌及び酵母を接種して、3MH及びアルコールを生成させる、3MH及びアルコール含有液の製造方法。前記原料水溶液は、ブドウ果皮抽出液の含有液であり、前記乳酸菌が、S-（3-ヘキサン-1-オール）グルタチオンをS-（3-ヘキサン-1-オール）-L-システインに変換することができる乳酸菌であり、かつ、前記原料水溶液に乳酸菌を接種した後0～6日発酵させた後に、前記水溶液に酵母を接種してアルコール発酵を行う３ＭＨ及びアルコール含有液の製造方法。【選択図】なし
