PROBLEM TO BE SOLVED: To provide noodles which remarkably shorten the boiling time of the noodles from that of non-grooved noodles and are by no means inferior to the non-grooved noodles in appearance, taste and texture after cooking.SOLUTION: The problems are solved by providing a plurality of grooves in the longitudinal direction of noodle strips and regulating the sum total of the area in the plurality of groove parts in the cross-section of the noodle strips to 20-50% of the area of the rectangle of the cross-section thereof in the noodles having a rectangular cross-sectional shape of the noodle strips.COPYRIGHT: (C)2009,JPO&INPIT【課題】麺類の茹で時間を溝なしの麺よりも大幅に短くし、かつ、調理後の外観、食味および食感において溝なしの麺と遜色がない麺類を提供する。【解決手段】麺線の横断面の形状が長方形の麺類において、前記麺線の縦方向に沿った複数の溝を有し、前記麺線の横断面における前記複数の溝の部分の面積の合計を、その横断面の長方形の面積の20~50%とすることにより、上記課題を解決する。【選択図】図1
