PROBLEM TO BE SOLVED: To provide softened rice cake capable of being scooped up by a spoon, being crushed by ones tongue, and being swallowed as rice cake which a person who suffers from dysphagia can eat.SOLUTION: Provided is softened rice cake M for a person who suffers from dysphagia, characterized that: a weight ratio composition of raw materials of the softened rice cake M is formed of sticky rice flour A of 100 pts.wt. which is a main raw material, an exogenous enzyme B of 0.26-2.00 pts.wt. which is mainly formed of α-amylase, water C of 180-308 pts.wt., and a gelator D of 6.0-12.0 pts.wt. which is mainly formed of dextrin and thickening polysaccharide, thereby, while maintaining appearance and flavor unique to rice cake, a permission standard for food product for person who suffers from dysphagia and a standard of universal design food are satisfied.
